Who all viewing this has ever Deep Fried a turkey? Kathawkes, I know you guys have done it before, tips? :-)

Basically, looking for advice, thoughts, safety precautions. Anything to make sure that houses don't go *BOOM*.

I've eaten it and watched it cooked, but never done it myself. It was surprisingly good. But it also looked pretty hazardous. I'm not sure I'd do it myself.

To avoid making houses go boom one should NOT deep fry the turkey inside a structure or near a structure.

RULES for Deep frying a turkey:

1) Deep fryer OUTSIDE the house, on the lawn.

2) Fire Extinguisher Just in Case

3) Know the volume of oil you need for the fryer, don't put any more then that in. Remember to allow for the TURKEY in your calculations.
(Easy way to do this is to fill with water, keeping track of how much you have put in, then place the turkey in and make sure it doesn't spill over and the turkey is covered adequately.)

4) The turkey MUST be DRY when you put it into the hot oil.

5) You will need at least three people. Two to put turkey in/ take turkey out. And one to be there Just in Case.

Yeah, well, my family has been doing a DFT for a few years now every T-Day. And the first time, we pretty much did everything wrong, except we did have lots of people on hand.

We almost caught the back patio on fire (but didn't becuase my sister's father-in-law is a very intelligent man who turned off the fryer when it became obvious that an explosion was eminent.

We also didn't dry the turkey first, and though it is very impressive, the jets of boiling hot oil that shot out of the fryer as they put the turkey in were actually more terrifying then you'd ever want to believe.

And the turkey didn't taste quite so good that year...

But we got better.

We moved the fryer out into the yard (away from the house)
We now make sure that turkey is dry INSIDE and OUTSIDE (cause one year we forgot about the inside)
And we now let my sister's Father-in-law supervise cause obviously we aren't "adult" enough to do it without blowing ourselves up...

I've done it before and thought it was very easy. I would recommend having a second person on hand to hold the platter when you take the turkey out of the fryer, but other than that no other help is needed.

1) Use peanut oil...it doesn't splash out as much.
2) Don't drop the whole turkey in at once, lower it in stages so the oil doesn't overflow.
3) Obviously don't do it right next to the house or on a wooden deck. If you're only doing 1 or 2 birds, then it should be okay to do it on grass...any more than that and the oil spillage will kill the grass.

Let it cool and pour it back into the container. You can re-use it or just throw it out with the trash.
